Grégory is Burgundy’s Jean-Claude Boisset’s official ‘viniculturalist’, which is exactly what it sounds like. An expert in both the plethora of vineyard sites Boisset works with as well as crafting the finished product in the cellar, he makes a staggering total of 35 different wines! Today we are lucky enough to get him to shed some light on the forgotten and often mistreated grape of Burgundy, Aligote.
