Vinification: “Old World vs New World”

Winemaker Gabrielle Simmers talks about the difference between old world and new world winemaking styles when it comes to vinification, and what she has learned to do, and not to do in the winery. Gabrielle makes “The Supernatural”, a Sauvignon Blanc from limestone soils in Hawke’s Bay, New Zealand. She sat down with Ask a Winemaker at Red and White Wines in Chicago in June 2013.
